Cooking Tips for Burger:

Thaw your elk meat in the refrigerator in it's Cryovac package. Because elk is very lean, containing little fat or marbling, cooking to rare or medium rare preserves the juices. NEVER OVERCOOK ELK! Use a high heat for a short time to insure the best flavor and maintain moisture. Do not over season elk!  You want to taste the elk. Seasoning is to enhance the natural flavors. Sprinkle it with your favorite seasoning and allow the meat to sit for a few minutes before cooking.

Kabob Marinade

A tasty, easy-to-make marinade, great for any grilled meat. Makes enough for 2 lbs of uncooked meat ? 3 cups or 6 servings.

1 cup vegetable oil, 3/4 cup soy sauce, 1/2 cup lemon juice, 1/4 cup Worcestershire sauce, 1/4 cup prepared mustard, 1 1/2 tsp ground black pepper, 2 cloves garlic, minced, 1 tsp MSG (optional)

Directions: In a large resealable plastic bag, combine the oil, soy sauce, lemon juice, Worcestershire sauce, mustard, ground black pepper, garlic and MSG (meat tenderizer). Mix well and add meat. Marinate in the refrigerator for 4 to 24 hours. Cook the meat quickly over a high heat, then set aside to complete cooking. DO NOT OVERCOOK!

Cooking Tips for prepared Roasts:

Keep frozen until ready to use, defrost thoroughly under refrigeration. Preheat oven to 250º. Place elk roast in covered baking dish.  Heat in oven until internal temperature reaches 140º.  (As ovens vary we suggest the use of a meat thermometer). Reserve juice to use for gravy. Wrap any unused roast and return to refrigerator immediately. Do not refreeze.

Rub the spices into the meat and allow the meat to sit for a few minutes before cooking.
